The Best Turkey

Many of you know I like to BBQ just about everything. When It comes to Turkey, BBQ would be my second choice as there is nothing like a properly roasted bird.

In either case, For the best Turkey you have to brine! These are good instruction -

Never do stuffing in the Turkey - this just dries it out and requires longer cooking times. Place some aromatic herbs loosley in the cavity instead, like a blend of thyme, sage and rosemarry.

Rub the skin with olive oil and season with a poultry blend - I use Bell's

Roast for 25 - 30 minutes at 500 to brown and crisp the skin - then set the oven at 350 to complete the cooking time.

cover the breast with foil to avoid drying out of the best part.

When done - Let the bird sit for 20 to 30 minutes before carving.


I recomend a digital temp gauge to get it just right.

Good Recipe Viper. If memory severs me correctly this is the recipe from Alton Brown's "Good Eats" (yes I watch this show religiously), and it is a excellent way to cook a bird.

We had 31 people over for thanks giving this year. We roasted a 34lbs. turkey and we deep fried a 18lbs. turkey (I would be more then glad to tell anyone how to deep fry a turkey).

I love to cook and would be more then glad to swap recipes with anyone that would like to. I was a sous chef for a large restaurant in the Seattle area for four years.

Nice viper i only eat turkey if the meat is juicy.....hate when peeps dry it out thats just gross........... :twl: and also wanted to add cant wait till i can get back to :guns: you hahahahahaha :twl:
